Especially for the sensitive vitamins, this special type of preparation is much gentler than cooking in a normal pot. For example, Vitamin C is retained by up to around 90% during pressure cooking. The food also retains its natural colour when cooked in a pressure cooker. During boiling, the air in the pressure cooker is almost completely displaced by the resulting water vapor. When the outlet valve is closed and the cooking process begins, there is hardly any oxygen left inside the pot, which is responsible for decomposing the valuable vitamins and nutrients. Food cooked under pressure is a real treat not only in terms of taste, but also visually.

The temperature increase in the pressure cooker ensures that the cooking process is shortened by up to 70% compared to normal cooking. After the lid is locked in place, the boiling process creates excess pressure inside the pot, which raises the boiling point of the water to 230 to 240°F. The boiling process is called "pressure cooking". The pressure cooker makes cooking effortless and saves you time.

How to Use a Pressure Cooker:

Cooking - Step 1

1. Open the Pot

Press the operating key on the lid handle in the direction of the arrow. Turn the lid to the right as far as it will go and remove it.

2. Fill with Liquid

You must always pour in a minimum amount of liquid. Depending on the recipe, you can sauté onions or meat first, or fill with liquid only (water, broth, wine, etc.). The measuring scale in the pot indicates the min/max amount of liquid and must not be under or over. If necessary, place the tripod in the pot and place the insert on top.

3. Close Pot

Close the pot when all ingredients are in it. Place the Fissler placement aid with the red dot on the pot lid in the recess provided on the pot body and place the lid on. Turn the handle on the lid to the left to close the pot securely. Fissler pressure cookers audibly lock into place and the indicator in the handle changes from red to green. Now heat the pot at maximum stove power.

4. Set Cooking Level

The Vitavit® Premium has four cooking levels, including a pressureless steam cooking level. Simply set the desired cooking level according to the recipe:

  • Cooking level 1 for delicate foods such as fish, broccoli and fine vegetables.
  • Cooking level 2 for robust vegetables such as beet and cabbage
  • Cooking level 3 for dishes with longer cooking times such as meat or stews.

The Vitaquick® uses rings to indicate the current cooking stage: One ring corresponds to the slow cooking stage (vegetables), two rings correspond to the quick cooking stage (meat).

5. Control the Cooking Process

The cooking display with traffic light function navigates you safely through the cooking process.

The yellow ring signals that the correct temperature will soon be reached and that you can already turn down the stove.

The green ring indicates that the selected cooking level has been reached. From now on, the cooking time begins.

When the red ring appears, the temperature in the pot is too high and the pressure cooker will automatically start to release steam. Switch the stove down to return to the green range.

6. Relsease the Steam

Depending on the model, steaming works in different ways. With all Fissler pressure cookers, you can release the steam using the control button on the lid handle. In addition, the Vitavit® Premium offers quick steaming through the cooking valve in the lid.

7. Open Pot

After the steam has evaporated, open the pot by pressing the operating button on the lid handle and turning the lid to the right.

Tip: You can use the residual heat from the cooker until the pot is depressurized and you open it, especially when cooking dishes that take longer to cook.

8. Clean

Clean the pressure cooker after each use. Remove the sealing ring, cooking crown and lid handle from the lid and clean them by hand.
